week 11 with Vidis Kochtüte

This week was filled with even more deliciousness than last week! They’re on a roll!

Pigs in a blanket with seasonal side salad

Who doesn’t like an american classic, made at a grander scale? Much different than the american version made as a cocktail appetizer, this was a full meal. I made it for lunch too. The puff pastry was lined with zucchini, cheese and basil, before I rolled my sausages with it. It was a lot easier to make than I anticipated and made for a very filling lunch.


Baked perch fillets with almond honey crust, broccoli, and boiled potatoes

This was delicious. I like perch and the crust I made for this dish was wonderful. It was a great combination of flavors and textures. The broccoli and potatoes made for the perfect side dish.


Korma curry with sweet potatoes and chickpeas

This was not a spicy curry. The sweet potatoes and chickpeas made it a filling meal. I think I may have reduced the liquid too much as the recipe photo had much more sauce than I did. I think what I did wrong is that I didn’t cut my sweet potato into small enough cubes, so I had to cook everything longer, which made the liquid reduce.


Thai rice noodle salad

I was quite pleased with how this dish came out. The most important thing was getting the rice noodles cooked just right and I did it! They actually need very little time to cook. The flavors of this salad were all great. I made the small mistake of using all the chili flakes, so it was a tad on the spicy side.


Apple potato rösti with cucumber salad and lime raita

Rösti is a very swiss german dish. I enjoy it very much. This was my very first time making it. It can be very tricky. I didn’t do too bad a job either. The apple mixed in with the potato was a different touch. I’m not sure I like it as much as just using potato. I did make a mistake though. I didn’t realize that when I used a lime in one of my other dishes, I needed to keep half of it for later. So, unfortunately, I could not make the lime raita to top the rösti, but that was ok.

    • Oh most definitely! There’s lots of dishes from all the previous weeks I would love to cook again. From this one, I would make the pigs in a blanket, the fish, and the rösti again. I would change the rösti and not include the apple.
